A bountiful harvest…

We’ve been eating our first veggies from our garden! There have been a few tomatoes, a few cucumbers, and these guys!

Red ‘tators!

Don’t you just love their color? And they didn’t taste half bad, either!

One of ‘em did have this weird white pimple looking spot. Not sure what causes that, but I cut it off. I half expected puss to come shooting out when I poked it with the knife!

Anyway, we made a recipe similar to this one:
Lipton Onion Potatoes
- 10 red potatoes, unpeeled
-Â 1/2 c. butter
-Â 1 pkg. Lipton onion soup mix
-Â 3/4 c. water
- 2 tsp. salt
Wash potatoes, slice 1/8 inch thick, unpeeled. Bring other ingredients to a boil. In a greased 2 quart casserole, place layer of potatoes and pour some of soup mix over, make 3 layers. Bake covered for 1 1/2 hours at 375 degrees. Serves 6.

Unfortunately, I was so busy being a proud Southern Mom of our very own home-grown potatoes, I forgot to get a picture of the recipe’s end result. I’ll do better next time, I promise!
